Peanut Clusters

This is my go-to chocolate fix in a pinch. Sometimes there's just not enough energy or time in the day to bake all of the extravagant things.



I have such a weakness for these. And the Corona has the Winco bins void of peanut clusters so this is me turning to my own devises.




Peanut Clusters

2 Cups Lightly-Salted Peanuts
1 cup Semi-Sweet Chocolate Chips
1 cup White Chocolate Chips
2 Tbsp Peanut Butter
1 Tbsp Crisco Shortening

1. Fill a medium sized pot halfway with water and get it boiling on the stovetop.
2. Meanwhile, add the chocolates, peanut butter, and Crisco in a shallow metal bowl that fits on top of the pot without touching the boiling water.
3. Place the metal bowl with the ingredients over the boiling water and continuously stir until the chocolate is completely melted.
4. Remove the bowl from the top of the pot and immediately add in peanuts, stirring to combine.
5. Line a cookie sheet with parchment paper and use a cookie scoop to scoop clusters on the lined pan, about an inch apart.
6. Place the cookie sheet with the peanut clusters into the fridge to solidify.
7. Once the chocolate hardens, store in an airtight container or eat. I keep mine in the fridge because I love them cold. :)
